The idea for these Banana Lollies came about for a ‘Frozen’ themed birthday party a couple of years ago and they were a great hit despite it being November! They’re great for getting everyone involved as they’re so simple to make – for the party I handed out the frozen pops with a tray of toppings for the children to roll them in.
The recipe can be easily adapted to cater for any intolerances or preferences and they’re great to experiment with so you can go to town with the topping choices. The frozen bananas will happily sit in the freezer so I tend to make a big batch and take out when needed.
100g yogurt of choice
4 pop sticks
2 tbsp cacao nibs
2 tbsp chopped nuts
1 tbsp freeze dried raspberries
1/2 tbsp flax seeds
1/2 tbsp sesame seeds
- Peel the bananas and cut in half, dip into the yogurt and place on a baking tray in the freezer for a couple of hours
- Take the frozen bananas out and place on the side for around 10 minutes, you want the yogurt costing to start defrosting slightly so the toppings stick
- While you’re waiting, pour the toppings not a flat plate and mix them up a little
- When the yogurt is feeling a little ‘tacky’, roll the bananas in the mixture. It might take 2-3 rolls for an even coverage. When the bananas are evenly covered, serve and eat immediately
