Fudge, chewy and delicious, these are a big hit with my kids (and the other grown up kid that lives here!). They keep in the fridge for up to a week so I make up a batch knowing there is a healthier option to reach for when those sweet cravings hit!

Cacao Energy Bites
70g coconut milk – put the can in the fridge overnight and scrape out the set coconut cream it makes these creamier and more fudge like. You can use the leftover coconut water for smoothies.
50g coconut oil
50g goji berries
50g pumpkin seeds
40g raw honey
- Put the coconut milk, cocoa, coconut oil and honey into a large saucepan and place on your lowest heat. You need the ingredients to melt together but slowly and gently so the mixture doesn’t burn. Meanwhile line a baking tray or ceramic dish with greaseproof paper.
- Once the cocoa mixture has melted and all the ingredients have combined, turn off the heat and stir in the oats, goji berries and pumpkin seeds.
- Once everything is thoroughly combined, pour the mixture into your prepared tray. Spread it out until its about 1 inch thick and then leave to set in the fridge for approximately 1 hour.
- Once set, cut into squares – or any shape you wish and store in a sealed container until ready to eat.
