Cauliflower Satay

This Cauliflower Satay is a super tasty vegan alternative to the usual chicken satay. A simple, 30 minute recipe that is full of flavour and health boosting nutrients!

Cauliflower Satay 
1 garlic clove, minced
1 tbsp soy sauce
1 chilli, finely chopped
2 tbsp olive oil
1 cauliflower, cut into florets
1 tbsp ground turmeric
1 tsp honey
season well

Satay Dipping Sauce 
400ml coconut milk
150g nut butter
3 tbsp soy sauce
Juice of 1 lime
1 garlic clove, minced
1 chilli, finely chopped

  1. Preheat the oven to 180/gas mark 5
  2. Add the garlic, soy sauce, chilli, olive oil, turmeric and honey to a mall bowl and mix well. Coat the cauliflower florets with the mixture and place in the oven for 15 minutes
  3. After 15 minutes, check turn the cauliflower and continue to roast for a further 10 minutes.
  4. Add the satay dipping sauce ingredients to a pan, mmix well and simmer for 10 minutes
  5. Take the cauliflower out of the oven, thread onto skewers, pour the sauce into a bowl and serve with salad
