Chick Pea & Spinach Masala

Curry feat

Forget takeaways, this Chick Pea & Spinach Masala is super tasty while being really easy to make. Having friends over? You can make it even easier by cooking the sauce in advance then heating up on the day adding chick peas and spinach – perfect!

I cook this for my 4 year old so I use mild chilli powder, increase the quantity if you can take a bit of heat – fresh chills can also be added at the sauté stage.

Chick Pea & Spinach Masala
Serves 4

1 tbsp coconut oil – or oil of choice
1 onion
3 garlic cloves
1 inch ginger
1/2 tbsp curry powder
1/2 tbsp turmeric
1 tsp chilli powder – or more to suit taste
1 tbsp nut butter
1 tin tomatoes
1 tin coconut milk
1 tin chick peas
2 large handfuls of spinach
1 handful coriander

  1. Heat up oil in large saucepan on a medium heat. Finely chop the onion, garlic and ginger and sauté for 10 minutes
  2. Add the curry powder, turmeric and chilli powder and cook for one minute
  3. Add the nut butter, tomatoes and coconut milk and cook over a high heat until bubbling then reduce to a simmer for twenty minutes
  4. Add the chick peas and cook for a further 10 minutes
  5. Add the spinach and coriander, cover the pan and cook for 5 minutes
  6. Serve with cauliflower rice and onion salad (normal rice will also be fine)
