Gingerbread Bliss Balls

The thought of picking Sonny up from school without a snack to hand sends shivers down my spine. Just three brazil nuts or a couple of olives can be the difference between a happy afternoon or the wrath of a witching hour. I am not exaggerating. Needless to say, I’ve allocated most of my time to developing snack recipes to ensure a happy life.

These Gingerbread Bliss Balls are perfect as they’re easy to make, taste delicious and can be kept in the freezer for an array of snack emergencies! They’re also Christmassy and make you feel all cosy and warm inside, although that could just be me!

Gingerbread Bliss Balls 
Makes 24

100g hazelnuts
60g oats
6 medjool dates
1 tbsp cacao powder + extra for dusting
1 tsp ground ginger
1/2 tsp nutmeg
1/2 tsp cinnamon

  1. Place all of the ingredients into a food processor and blitz until thoroughly combined into a sticky dough
  2. Using a teaspoon, take a spoon of mixture and roll into a ball using slightly wet hands – this will help with the stickiness! Set the balls to one side
  3. Dust some cacao over the balls and roll around until coated
  4. Freeze for an hour. these can be kept in the freezer or the fridge
