5 garlic cloves, minced
Zest & juice of one lemon
2 tbsp chopped rosemary
2 tbsp olive oil
2 chicken breasts, sliced into chunks
1 red pepper, sliced into chunks
1 courgette, sliced into chunks
1 red onion, quartered
6 spring onions, cut length ways
2 lemons, sliced
6-8 skewers – if they are wooden you will need to soak them in water for 15 mins to stop them burning
1. Mix the marinade ingredients together and add the chicken chunks, marinade for at least 4 hours for maximum flavour and tenderness
2. Once the chicken has marinated, thread the vegetables, lemon and chicken onto the skewers in any order you fancy to form the kebabs – the lemon slices and spring onions will fold in half and thread on easily
3. Grill or griddle for 15 minutes until the chicken is cooked through, serve with home made tsatsiki and a crunchy green salad with avocado and extra lemon wedges – truly delicious!
Pretty much any mixture of herbs and vegetables will work with this marinade so experiment with your favourites!
