Lemon & Coriander Hummus


Traditionally I’m not that great at making hummus. Hannah makes an amazing turmeric version that always leaves me wanting more so when I accidentally came up with this simple and tasty recipe, I was super happy.

Heart healthy and protein rich, hummus & crudités is a brilliant afternoon snack or light lunch and making your own for your home retreat day gives it an extra special touch. Make in advance and keep for up to 3 days in the fridge so you can spend the time relaxing and nourishing yourself.

Lemon & Coriander Hummus

1 tin of chickpeas, drained
2 garlic cloves
juice of 1 lemon
31g packet of coriander, finely chopped
1 tbsp cider vinegar
salt & pepper
pomegranate (optional), seeded

  1. Place all the ingredients excluding the pomegranate seeds and a small amount of the coriander into your food processor or blender. Blitz until smooth.
  2. Season to taste and sprinkle over the pomegranate seeds and remaining coriander.
