Not Toffee Apples

Apple bobbing is one of those things that you just do once a year, even if I had a glut of apples I wouldn’t dream of playing apple bobbing if it’s not the 31st October. Actually, I’m planning on introducing it to Sonny this Halloween, I’m excited about seeing his face when I fill a big bowl with water, throw some apples in and then tell him to put his arms behind him and try and get them out with his mouth. He’s going to think I’ve completely lost it.

Another yearly apple event was having toffee apples on bonfire night. What a terrible snack, it’s certainly not something I ever plan on letting Sonny have so I set about making a healthier version –

Not Toffee Apples
Makes 4

4 crunchy red apples
100g dates
1tbsp nut butter
Lollipop sticks

Toppings to include:
Pistachios
Roast hazelnuts
Pecans
Freeze dried raspberries
Desiccated coconut

  1. Soak the dates in boiling water overnight if possible or at least for a couple of hours
  2. Put the soaked dates in a food processor and blitz until creamy, keep scarping the sides with a spatula
  3. Add the nut butter and blitz again until fully combined
  4. Roll an apple in the date mixture until mostly covered, poke a lollipop stick in and then use a spoon to ensure fully covered
  5. Repeat with other apples and pop into the fridge for an hour to go tacky
  6. Choose a selection of topping and place on a plate, take the apples out of the fridge and roll into the toppings – use a spoon again to cover completely. The apples can be kept in the fridge for a couple of days
