For those who haven’t heard of overnight oats before, this recipe will bridge the gap between loving porridge in the winter and not wanting a hot breakfast during the summer. It’s really easy to prepare, is made in advance meaning you can just pick up and go in the morning plus it’s really versatile.
Oats are the perfect way to start the day, they contain soluble fibre that slows down the absorption of carbohydrates into the bloodstream meaning you don’t get that sugar spike in blood sugar and insulin levels that can cause fat storage.
Oats are a rich source of magnesium, which is works with calcium to maintain healthy bones. It also helps to release energy, absorb nutrients, as well as regulating temperate, nerves and muscle function.
1 cup/100g oats
1 cup/250ml milk of choice
1 cup/250ml of yogurt
1 tbsp chia seeds
1/2 banana, sliced
2 tsp nut butter
Sprinkle of cacao nibs
1. Mix the oats, milk, yogurt and chia seeds in a jar or bowl, store in the fridge overnight.
2. Take out the oats and top with 1/4 sliced banana each and a dollop of nut butter. Enjoy!
