Quinoa Caprese


This is the second in my ‘Supermarket Lunch’ series of recipes, they’re specifically designed for you to grab ingredients costing under £5 from any supermarket and produce a healthy, speedy and delicious lunch at work.

Quinoa & Pomegranate Salad

Quinoa Caprese
Serves 1

250g pre-cooked Quinoa
1/2 of a 150g ball mozzarella
1/2 of a 31g packet of basil
1/2 of a 330g punnet of cherry tomatoes

Cost: £4.19 – Under the £5 budget (with leftovers for the next day meaning tomorrow’s lunch just needs a packet of quinoa!)

  1. Heat your quinoa according to the packet instructions, most are approximately 2 minutes in the microwave.
  2. Whilst its cooking, tear up the mozzarella, basil and halve the tomatoes.
  3. Once cooked, decant quinoa into a bowl and stir in the rest of the ingredients. Season if you have that luxury!
