Raspberry & Coconut Parfait


This ‘Retreat at Home’ recipe is a luxurious breakfast that feels really indulgent, exactly what you need when indulging in a bit of self care!

A simple recipe, this parfait is made in advance so you only need to grab a spoon and eat, what could be easier?

Raspberry & Coconut Parfait 
Makes 6 servings, will store in fridge for 2-3 days

1 tin coconut milk
175g frozen raspberries
5 tbsp chia seeds
1 tbsp vanilla extract
250g yogurt of choice

1. Add all of the ingredients except the yogurt to a blender and blitz until fully combined
2. Spoon a layer into six small glasses or ramekins, follow by a layer of yogurt and repeat
3. Place in the fridge overnight
4. Remove from fridge, chose from the toppings below or just eat it as it is!
