I think it’s safe to say that I have a sweet tooth. Actually, it would be more truthful to say I have a snacking tooth as I don’t discriminate between sweet and savoury! This recipe is my go to snack when I just need a quick, sweet dose of happiness. It’s yet another simple recipe that just requires all the ingredients to be thrown into a food processor, the fudge can then be stored in the freezer.
Raw Cacao Fudge
200g creamed coconut
1 large banana
3 tbsp cacao powder
3 tbsp raw honey
1 tbsp smooth nut butter
1 tsp vanilla extract
1 tbsp cacao nibs (optional)
1 tbsp desiccated coconut (optional)
1. Warm the creamed coconut, still in it’s packaging, in a mug of boiling water. We’re looking for it to turn in from a solid block into a liquid
2. Add all of the ingredients to a food processor except the cacao nibs and desiccated coconut if using. Blitz until fully combined
3. Line a loaf tin with parchment paper, sprinkle in the cacao nibs and desiccated coconut if using, and spoon over the cacao mixture. Put in freezer for an hour or until set
4. Using a sharp knife, cut the fudge into small squares. Eat one now as a reward and store the rest in the freezer until needed…that should be approximately 5 minutes!!
Why not have a play with different toppings. You can also omit the peanut butter if you have a nut allergy.
