Spicy Greens Soup
1 leek, finely chopped
1 bunch spring onions, finely chopped
1 onion, finely chopped
1 head of broccoli, chopped into mini florets
1/2 green chilli, seeds removed & finely chopped
2 large handfuls of spinach leaves
large handful mint leaves, finely chopped
300ml vegetable stock
Lemon & courgette zest to serve (optional)
Roasted parsnips to serve (optional)
1. Heat 1 tbsp oil in a large saucepan. Add the leek, spring onions, onion and broccoli and sauté on a medium heat until softened – approx 10 minutes.
2. Add the chilli, spinach and mint and continue to sauté for a further min.
3. Add the stock and simmer for 10 minutes.
4. Leave to cool slightly then whizz up in a food processor until smooth. Serve topped with lemon zest and some extra mint. I love winter soup accompanied by some roasted veg!
