Sweet Potato Toppings

When I’ve had an exhausting day, the last thing I want to do is spend hours in the kitchen preparing a meal however, I do still want to choose food that is super tasty and nutritious. On extra busy autumn days, the baked sweet potato is an ideal choice for a speedy dinner, it’s faster to bake than a normal jacket potato and due to its sweetness I can play around with alternative toppings.

Baked Sweet Potatoes
Pre-heat oven to gas mark 6/180, place two sweet potatoes on a baking tray and bake for approx 35-45 mins. You should be able to squeeze it with a little give but not so it goes mushy in your fingers. I serve all my sweet potatoes with a generous side salad inspired by Hannah’s Rainbow Salad or my speedy Lemon & Garlic Courgettes.
Sweet Potato Toppings
(Serves 2)
Cooked Breakfast
egg
2 sweet potatoes, baked
large handful of rocket
1 avocado, halved and sliced
2 rashers of bacon, grilled
6 cherry tomatoes, halved then grilled
2 eggs, poached (learn how to poach eggs here) or two soft boiled eggs

1. Cut a cross into the top of each potato and squeeze gently between the cross to open your potato and create a hole ready for your toppings
2. Share the rocket out between each potato
3. Top the rocket with a slice of bacon, avocado slices and finish with an egg.
4. Scatter over the tomatoes, season and serve.

 

Vegan Breakfast

2 sweet potatoes, baked
large handful of spinach
380g-400g tin of black beans
2 garlic cloves, finely chopped
1 tsp coconut or olive oil
1 avocado, smashed
1 large tomato, chopped
1/2 red onion, finely chopped
1 tbsp fresh coriander, finely chopped
zest and juice of a lime

1. Heat the oil in a frying pan or saucepan on a medium heat, add the garlic and saute for 30 seconds before adding the black beans, stir and warm through for 5 minutes
2. Meanwhile combine the avocado, tomato, red onion, coriander, and lime zest and juice to make a simple guacamole
3. Cut a cross into the top of each potato and squeeze gently between the cross to open your potato and create a hole ready for your toppings
4. Share the spinach out between each potato
5. Spoon the warm garlicky black beans on top of the spinach
6. Top with the guacamole, season and serve

 

Amazing Chilli

Two Dinners In One!
Make our awesome chilli for dinner on a Sunday and have two portions ready to top a piping hot jacket on Monday night! This couldn’t be faster!  I normally have some avocados, sour cream and red onion left over from the chilli too which all go perfectly with the potato!

 

Herby Smoked Mackerel 
mack
2 fillets of smoked mackerel, shredded
1 tbsp sour cream
1 tbsp fresh dill, finely chopped

1. Mix the mackerel, sour cream and dill until combined

2. Cut a cross into the top of each potato and squeeze gently between the cross to open your potato and create a hole ready for your toppings
3. Divide the mackerel filling between each piping hot potato and serve with a delicious side salad

 

Tuna, Lime & Coriander
tuna
1 tin of tuna in spring water
2 tbsp creme fraiche
Zest and juice of a lime
1/2 red onion, finely chopped
1 tbsp fresh coriander, finely chopped

1. Mix the tuna, creme fraiche, red onion, coriander, lime zest and juice until combined
2. Cut a cross into the top of each potato and squeeze gently between the cross to open your potato and create a hole ready for your toppings
3. Divide the tuna filling between each piping hot potato and serve with a delicious side salad

 

Goats Cheese & Beetroot
beets
large handful of rocket
125g soft goats cheese, sliced
2 beetroot, sliced
1 tbsp fresh thyme
2 tsp honey

1. Cut a cross into the top of each potato and squeeze gently between the cross to open your potato and create a hole ready for your toppings
2. Share the rocket out between each potato
3. Top the rocket with alternating slices of beetroot and goats cheese
4. Sprinkle over the fresh thyme and drizzle on the honey, season and serve
