Thai Steamed Sea Bass

There is a Thai place back home that does the most amazing food, it’s actually ruined eating Thai for me because nothing else compares. My favourite dish is the steamed sea bass – it’s so tasty! So, I set about recreating it without the se of sugar which is so common in Thai cuisine.

Thai Steamed Sea Bass 
Serves 2

2 sea bass fillets
4 spring onions, sliced into inches
1 thumb sized piece of ginger, cut into matchsticks
1 lime, zested and juiced
1 red chilli, finely sliced
1 garlic clove, finely sliced
1 tbsp tamari (or substitute for soy sauce)
1 tsp raw honey
Handful coriander, roughly chopped

  1. Preheat oven to 200/gas mark 6
  2. Place the sea bass in an oven proof dish
  3. Sprinkle on the ginger, spring onions, chilli, lime zest and garlic
  4. Pour over the lime juice, tamari and honey
  5. Wrap the dish in foil and put on the middle shelf of the oven for 20 minutes
  6. Take out of the oven and sprinkle with coriander to serve alongside your favourite Thai style sides, I serve this dish with pak choi lightly stir fried in sesame oil and brown rice
